FESTIVE CORNISH GAME HEN w/pan roasted vegetables and Yogurt Dill Sauce

Feeds Two
You will need two days to complete this recipe

What You Need
2-16oz Cornish Game Hen with back bone removed
1/4c Extra Virgin Olive Oil
Juice of one lemon
1T dry oregano leaf
2 garlic cloves crushed
1/2T table grind black pepper
½ pound fingerling potatoes cut lengthwise
1bu broccolini
10 baby heirloom or tri color tomatoes cut in half
1c chicken broth or stock
1T butter
2T minced garlic
1c yogurt
1/2c cucumber small dice
1T chopped dill
1T lemon juice
1T of oil for cooking
1bx of Kosher salt
salt and pepper to taste

Method

Day 1
1. In a bowl, place Cornish game hen, olive oil, dry oregano, crushed garlic cloves and black pepper.  Marinate overnight in refrigerator covered
2.  In a pot, add 2qts of cold water, 2T of salt  and the cut fingerling potatoes.  Bring to a boil and cook until potatoes are fork tender.  Strain, cool and reserve
3.  Have a large bowl filled with ice water.  You will use this to shock the broccolini.  In another pot of boiling water, season the water like the ocean with salt.  Add broccolini and cook until fork tender (the stem)
4. Combine yogurt, dill, cucumber and yogurt.  Reserve

Day Two
1.  Heat a grill to 350 degrees.  Spray or oil grates so game hen will not stick.  Cook until internal temperature of 365 degrees
2.  Meanwhile while chicken is cooking place a sauté pan on medium high heat.  Add 1T of oil.  Add fingerling potatoes flat side down and cook for approximately 2-3 minutes.  Add broccolini, mix and cook an additional 3 minutes.  Add garlic and tomatoes, stir and cook an additional 1 minute.  Add chicken stock and butter and cook for and additional 2 minutes.  Season to your liking.

Assembly
Place vegetables and broth in a bowl.  Place Cornish game hen on top of vegetables.  Finish with the yogurt sauce on top of the chicken. Garnish with warm pita bread.
