\n1 lb green beans<\/p>\n

1\/4 cup olive oil<\/p>\n

1 medium \u2013 sized onion, chopped<\/p>\n

2 cloves garlic, chopped<\/p>\n

1 cup chopped, peeled tomatoes<\/p>\n

1 tablespoon tomato paste<\/p>\n

1\/2 cup water<\/p>\n

Salt to taste<\/p>\n

Freshly ground black pepper<\/p>\n

1\/2 teaspoon sugar<\/p>\n

2 tablespoons chopped parsley<\/p>\n

DIRECTIONS<\/b><\/p>\n

1) <\/b>Wash beans well. Top and tail and remove strings if present. Cut into 5 cm (2 inch) lengths, or slit them lengthwise\u00a0(French cut).<\/p>\n

2) <\/b>Heat olive oil in a pan and add onion. Fry gently until transparent, add garlic and cook a few seconds longer. .<\/p>\n

3) <\/b>Add tomatoes, tomato paste, water, sugar and salt and pepper to taste. Cover and simmer for 15 minutes.<\/p>\n

4)<\/b> Add prepared beans and parsley, cover and simmer for further 15-20 minutes until beans are tender. Serve hot or lukewarm in the traditional way. Very good served chilled.<\/p>\n
